When did LA Knight wear that attire for his upcoming Ultimate figure?
The prototype has him wearing a grey and yellow vest with red and grey trunks. I've always seen LA Knight matching his vest with trunks, with similar colors.
Is this a mistake on Mattel?

No mistake.
I just checked he did wear that grey and yellow jacket with the grey and red attire at Crown Jewel 2023.
So Mattel got it right!

No At Crown Jewel he wore a red band on his left arm and no elbow pad on his right arm. Mattel gave him a right elbow pad and no arm band so while the trunks and jacket may be right it’s still not 100% accurate |

Tbf tho I still don’t have a clue why he comes with a different coloured elbow pad on the Defining moments he has literally never wore it

When they originally pulled the Bray after his passing, I was thinking that they would have saved it for some type of special release along with the Bray from that match to commemorate Bray's last match, but they are releasing Bray in UE S24. |
