I was thinking the other day of how badly WWF dropped the ball on Hogan vs. Flair in 1991-1992 and then I started thinking about other matches/feuds/tag teams that should have been great but never will be:
Ric Flair vs. Hulk Hogan (1991-1992) - The most anticipated match in the histroy of wrestling at the time and WWF did nothing with it. It should have headlined WM VIII and I believe was scheduled to until Hogan stated he wanted time off.
Sting vs. Bret Hart (1997-1999) - While both guys were not in their primes, they were still very capable to putting on some great matches. WCW could have milked this match-up for every penny and could have easily headlined Starrcade. Instead WCW did next to nothing and placed them in a mid-card series of matches for the U.S. title.
Owen Hart & Jim "The Anvil" Neidhart (1994-1995) - I always wished this team had been given a stronger push. Coming off of Owen's huge push in 1994 in his feud with Bret, Owen and Neidhart could have been the second coming of the Hart Foundation. While I don't think they ever would surpassed or even matched the original, I still believe they could have had great success.
Steve Austin vs Bill Goldberg (2003-2004) - I know Goldberg entered the WWE as Austin was retiring, I still think WWE should have had them wrestle at least one match. Back in 1998, this would've been a dream match.
Brock Lesnar vs Bill Goldberg (2003-2004) - Had both men not been leaving at the same time, i think this feud would've lasted longer. I was very disappointed by their "match" at WM XX because it could've been a classic brawling match.
Road Warriors vs Steiner Brothers (1996-1997) - While both teams weren't in their primes I have always wanted to see a hard push for these two teams to feud. IMO the two best teams to ever enter a ring, WCW had a solid chance to put on another dream match/feud, but did next to nothing with it.
What are some others people would like to add?

Rob Van Dam vs Shawn Michaels in 03.
They had their match in late 02, and while good, it really wasn't built up. They could've had a series of EPIC matches back then.

The Undertaker vs Bill Goldberg (2003) Would have loved to seen this just for the spectacle.
Legion of Doom vs Demolition - (1990) How Vince messed this up I'll never know.
Hulk Hogan vs Stone Cold Steve Austin (2002) - The 2 biggest names in wrestling history couldn't put their egos a side, would have drawn a ton of money.
Earthquake vs Andre the Giant - (late 80's/early 90's) Just for fun, to see the 2 biggest guys in the WWF go at it. Would have been a stinker though lol. Thought we were gonna get it when 'Quake crushed Andre's knee in 91.

Hmmm, great question. Let me think about it for a few minutes...
Instead of giving Ricky Steamboat that stupid dragon costume when he returned to the W.W.F. in 1991, they could've had some great matches and feuds between Steamboat and Bret and Steamboat and Mr. Perfect over the Intercontinental title, but they blew that opportunity, big time.
When they came over to the W.W.F., I'd say The Legion of Doom should've wrestled Ax & Smash Demolition, but I don't believe they ever did. They may have wrestled Smash & Crush, but that clearly wasn't the same thing.
If he didn't take off, I would've loved to have seen Stone Cold Steve Austin vs. Brock Lesnar, but we never got to see it and now that Brock is with the UFC, I don't believe we ever will.
I also think Bret Hart and Mr. Perfect would've made an awesome tag-team, but we never got to see it.
Speaking of Mr. Perfect, I thought for sure we would've ended up seeing either a team or feud between Mr. Perfect and Kurt Angle in 2002 when Perfect returned to the W.W.F., but we never did which is a shame.

Great topic.
I believe Flair/Hogan was put on the shelf due to house show events not selling as good as they would have hoped pitting the two against one another. It would have been a great feud at the time, but imagine if it had happened in the late 80s instead? That could have drawn huge, particularly in the South.
Sting/Bret was a huge failure by WCW, as well as giving away a World title match on Nitro (Goldberg defeating Hogan? I'm pretty sure). Also, the result to the Sting/Hogan & NWO feud that was built so great yet ended so poorly.
Goldberg/Austin in 2001-2002 would have been epic and would have drew huge for the WWF at the time. Sting/Rock would have been a great feud, too, if Sting would have just been willing to wrestle for Vince McMahon.
I wish we could have seen the Hart Foundation or British Bulldogs versus the Steiner Brothers during the late 80s. A proper series of PPV matches between Shawn Michaels and Bret Hart from after WMXII to WrestleMania XIV (although, I'm glad Austin won when he did). Vader defeating Shawn Michaels in mid-to-late 1996 for the WWF title.

Don't know why but I really wanted a HBK vs Kane fued back in 98. That would of been quite cool. Plus I think everyone wanted a SCSA vs Goldberg feud.

Hogan vs. Steamboat would've a feud I would've paid high money for back in the day. Could you imagine Hogan-Steamboat at WM VI instead of Hogan-Warrior?

I don't think it would've drawn nearly as many people, plus I don't think it would've been that great of a match to be honest. Not as good as Hogan & Warrior was. Hogan & Warrior was good because they both had very similar styles. By not being the greatest wrestlers around, by being the big-muscular guy, by being over HUGE with the crowd etc. Where-as Steamboat, clearly the better wrestler over Hogan by far, would've had to carry Hogan to a decent match. Plus, I really don't believe for a second Hogan would've jobbed to anyone smaller than him back in the day. He was VERY selective who he was willing to job to, to say the least.

Kurt Angle vs Bill Goldberg (2003) - Not sure if these ever faced off or not but would have like to seen it. Would have been intense.

HBK vs. The Rock. But HBK was to much of a mess back then. When he showed up for the Invasion angle all messed up. That would have been a perfect time. If he would of been clean we could of had HBK vs. Goldberg, HBK vs. Lesnar.

I'm pretty sure the plan was to start an HBK/HHH program after WrestleMania X7 that would extend several months, but who knows, we might have seen these matches too once he actually returned.

Road Warriors vs Steiner Brothers did face eachother on nitro btw. Yeah they did, but WCW gave them NO build-up and nothing much happened afterwards. WCW could've milked this match-up for a while and make it historical.
